RISING/PROVING

Ideal for nocturnal or postponed processes, Genius allows you to program your rising cycle, indicating the desired day and time to finish the job. Genius will activate with a first maintenance phase of the storage T to then develop the entire rising curve, until it coincides with the times indicated by you. The water connection also allows a balanced and constant rising process, ensuring uniform results over time.

DEFROSTING

Defrost your products in total safety. Indicate the thickness and for when you want it ready, the rest is done by Genius, your cold assistant.

CHILLING/COOLING

Genius quickly cools your products, directly from the oven, up to the safe threshold of 3°C, in total respect of the structure and product properties.

FREEZING

Genius quickly freezes the product core at -18°C, ensuring you the option of long conservation, keeping the properties unchanged organoleptic and structural

LOW TEMPERATURE COOKING

Free your oven and entrust the low cooking to Genius. Ideal for nocturnal processes, cooks your products at low temperature, in total respect of their properties. Once finished, it will go to the cooling or freezing phase, releasing you from the obligation to be present and keeping the product at the apex of its quality. You program, Genius works for you.

PASTEURISATION

Genius allows you to work professionally at all conservation levels, giving you the opportunity of pasteurising and cooling the products, in full compliance with the safety regulations.
